JENOLAN CAVES RESORT - ‘Jenolan School of Hospitality’
(Completed Traineeship (1 yr) – 7/9/02 to 7/10/03)

Jenolan Hospitality School provides Traineeship programs that combine practical work and on the job training with external education and training provided by ‘Central West College’ giving you the extra experience and qualifications in different areas of Hotel Management and the Hospitality Industry.

I have qualifications and work experience in the hospitality areas listed below:

ACCOMMODATION SERVICES
RECEPTION – Duties and Procedures
  • Experienced in using ‘PRESTO’ Hotel Management System (Software)
  • Answering telephone inquiries, taking reservations, transferring calls and recording messages
  • Check IN / OUT procedures

Cashier Procedures:-

  • Receive and charge transactions on PRESTO
  • Provide account details, payment receipts and troubleshooting incorrect accounts
  • Manage cash and till records and balance shift transactions
  • Operate EFTPOS Machines (take deposits and perform refunds)

RESERVATIONS – Duties and Procedures

  • Providing information and explanations of accommodation facilities, services provided and activities / attractions
  • Recording reservation details and guest details
  • Creating new accounts and entering details into PRESTO and sending confirmation letters
  • Contacting guests via telephone, email, fax and mail regarding new and existing reservations and inquiries

HOUSEKEEPING – Duties and Procedures
(In the last 3 months of my Traineeship I supervised junior staff.)

  • Clean rooms and bathrooms with correct chemicals
  • Make beds and fold towels
  • Maintain hallways, stairs and guest toilets
  • Record linen counts
  • Maintain storeroom, ordering new stock, packing dirty linen
  • Counting and stacking clean linen and stock on shelves

NIGHT AUDIT – Duties and Procedures

  • Balance reception and restaurant transactions for total revenue and settle EFTPOS Machines
  • Post accommodation and complete reports
  • Create Flash report for daily revenue summary of entire resort
  • Package cash, cheque etc in banking bags and record on report
  • Clean public areas including: lounge, walkways, toilets and reception desk and area

FOOD AND BEVERAGE SERVICES
RESTAURANT AND BAR – Duties and Procedures

Breakfast and Lunch Shifts

  • Set up buffets and restock food
  • Clear and reset tables
  • Cashier and balance transactions
  • Pack away, wash dishes and tidy restaurant and kitchen
  • Open Bar and clean and stock

Dinner Shift

(I am able to Wait on a small section of up to 15 small tables)

  • Set up tables with correct utensils and table cloths
  • Reset and clear tables
  • Seat guests at tables and take orders (Waiter)
  • Run plates and drinks to tables
  • Reservations, cashier and creating bills
  • Balance food and beverage transaction and total revenue
  • Clean restaurant and wash up

(In the last month of my Traineeship, I supervised the junior staff, Restaurant and resolved any guest complaints)

Bar and Beverage Service

  • Stock requisition
  • Cashier
  • Regularly clean bar surfaces, fridges and tables in lounge
  • Maintain ice, coffee cups, glasses etc
  • Prepare drinks from restaurant orders and run to tables
  • Cork bottles of wine at tables and pour beer for guests
  • Clear glasses, wash and polish
  • Service guests at bar and prepare drinks
  • Prepare drinks with garnishes and hot beverages
  • Create Cocktails and other mixed drinks
  • Balance cash register and perform Z report
  • Lock up shutters
  • Sweep, mop, clean bar and remove rubbish
  • Completed bar requisition for next shift

(In the last 3 months of my Traineeship, I trained and supervised junior staff in the Bar, customer service, table tray service and Wine corkage)

(I ran the Explorers Bar myself of a weekday for 7 months and with other staff of a weekend. I work well under supervision and under pressure.)
